Earlier this month we recorded an interview with high school student Jasmine Salter and University of Minnesota Extension Master Gardener volunteers Mary Cichon (See CON) and Del Hampton.

Jasmine met Mary and Del in elementary school when she started taking gardening and cooking classes. She learned how to prepare healthy snacks based on what might be ready for harvest that week. Mary introduced Jasmine and other students to green tomato cakes, a recipe featuring their own homegrown tomatoes. Jasmine and her friends improved the recipe and, in 2014, raised over fifteen hundred dollars selling them at a local festival.

Learning gardening and cooking basics with these Extension Master Gardener volunteers was just the beginning; Jasmine and her group received guidance from the not-for-profit organization called Urban Strategies Incorporated and they started a business called Green Garden Bakery. And through the use of their own garden in Heritage Park and a shared commercial kitchen, they bake enough vegetable-based treats to sell at the Lyndale Farmers Market, the Wedge Co-op, at local festivals and online.
